There's some newbies, returning old favourites and some are staying put completely.
Trinity Kitchen has confirmed that the street food vendors will be swapping over for the summer season. From Wednesday 25 May 2022 for the next nine weeks, you'll be able to find flavours from around the world from some of Leeds' finest independents.

Mans Market is having its debut over at Trinity Kitchen- and we couldn't be more excited to see their modern Hong Kong menu over in the converted J7 food truck.
Taking the menu from their Leeds' city centre restaurant on the road, foodies can find fluffy, steamed bao buns with a selection of different fillings to choose from, as well as a variety of Chinese-style loaded fries.

Shouk! are staying right where they are and will remain in the horse trailer for another nine weeks. Their Middle Eastern cuisine includes refreshing vegan and vegetarian friendly meals, with vegan chicken shawarma, falafel pieces and halloumi available in wrap or salad-style bowls- each of which make the perfect light summertime lunch.
Their most popular dish, sabich, will also remain on the menu. Made with fluffy steamed pita bread, crispy fried aubergine, egg, potato, tahini, amba and salad, this is going to be a lunchtime staple once the sun comes out.
Those in attendance of any vegan markets in Leeds or stopping at Chow Down’s winter food village will recognise these food vendors, but Shouk hasn’t been around long. Starting to make an appearance on Instagram in late 2020 and serving at local eateries ever since, this newcomer to the indie food market is set to be a game changer- and by the popularity over at Trinity, we're expecting to see their name more and more around the city centre and beyond.
Luigi's Street Food
YouTuber Danny Malin stopped at Luigi’s Street Food truck inside Trinity Kitchen to try out the deep-fried pizza, chicken parmi and other authentic Italian treats earlier this year - and now Luigi's is back for another round at Trinity Kitchen. The Rate My Takeaway star said: “They’re chucking some flavours together of the highest standards… some of these are the best in the land I’ll tell ya”.
On the menu you'll find a range of deep-fried calzone dishes with toppings like cheese and tomato, pepperoni, chicken and more. The Arancini is also on the menu, with mozzarella sticks and a Birra Moretti is never more than a contactless swish on the payment machine.
Luigi’s even have their own meal deal: a pizza with a combination of soft drinks or alcoholic lager for those ready to unwind. Priced at £10 and £12 respectively, there aren’t many places in the city centre that you can get a full calzone and a drink for under £15, so it’s well worth taking advantage of.
If you visited Trinity Kitchen earlier this year, you might recognise the Good Boy Burger van taking over Trinity Kitchen. Expect halloumi nugs to dunk in rich tomato or garlic sauces or opt for the speciality: short rib patty burgers inside the converted shipping container.
On their menu, you can find (you guessed it) plenty of burgers. Made from short rib smash patties, you can bet these meaty meals will be melt-in-your-mouth and utterly irresistible with their secret Good Boy burger sauce. Vegans needn’t pass up this burger van: their Cauli Schnitzel is a crispy cauliflower schnitzel patty with melted vegan cheese, streaky meatless bacon and garlic aioli- perfect for those looking for a meat alternative on a plant-based diet.
Bringing a taste of Thai cuisine from their Huddersfield and Leeds restaurants, Sri Non Thai is another newcomer to Trinity Kitchen with a lot of flavour to offer. Taking over the VW Camper Van, the popular eatery will be serving up traditional starters and sides with Thai curries.
Think crispy chicken, Singapore noodles and sweet chilli sauce- all served from the tiny hatch inside a converted car: you're certainly unlikely to find this concept anywhere else in the city centre.

“We are incredibly pleased with the new vans as they continue to offer independent street food traders a new platform to showcase their talents and abilities, without the need for their own set-up.”

A slice of New York has arrived in Leeds – and the pizzas are 18 inches wide
Popular pizza pop-up Edges Pizza has opened a permanent home in Leeds city centre.
Last summer you may have had the privilege to enjoy a slice of Edges Pizza at one of their many pop-up residencies across the city.
Their longest stint was at the sun-drenched roof terrace of Green Room, and it's safe to say their pizza went down an absolute treat.
Since then they've been a little quiet, but all for good reason. Edges Pizza has just opened a permanent new takeaway under the arches in Holbeck, and it's absolutely class.

Owners Grace and Edge who are from Harrogate opened Edges two years ago, taking inspiration from trips to New York over the years.
They've completely transformed the space into a proper love letter to the big apple. It will operate mainly as a takeaway, but there is a small seating area where you can perch and tuck into your pie.

The menu is perfectly curated, consisting of eight pizzas and three dips. And trust us, they are absolutely massive.
We opted for the American Hot with spicy pepperoni, banana peppers and parmesan as well as the mushroom pie topped with garlic creme fraiche and chestnut mushrooms.
Drizzled and dunked into moreish hot honey, it's rivalling some of the best pizza in the city.

For now, grabbing a pizza from Edges operates through a pre-order system. Pre-orders open at 12pm the day before via their website, you can pick your collection time and then you simply have to rock up and get your pizza.
There's loads of parking available nearby and if there are any remaining slots available you can pre-order up to an hour before collection.
We've got a feeling they're going to very busy indeed.
Dishoom announces official opening date for new Leeds restaurant

It's the moment we've all been waiting for, Dishoom is coming to Leeds.
The whispers of Dishoom's arrival in Leeds city centre have been going on for a while now, but over the past few weeks it has started to feel very real.
Taking over the beautiful old Flannel's site on the coveted Vicar Lane, signs started to pop up for Dishoom and work was cracking on fast.
Well now, we have an opening date - and we don't have long to wait.
Dishoom Leeds will open on Monday 3 August, with guests being able to enjoy 50% off food during an initial soft-opening period, ahead of the official opening on Friday 14 August.

As with every Dishoom café, the Leeds restaurant begins with a story. This one takes inspiration from the extraordinary true events surrounding the explosion of the SS Fort Stikine in Bombay Dock in April 1944, a wartime disaster that sent gold bars flying across the city.
Legend has it that some of the missing gold was never recovered. Some was discovered embedded in walls and rooftops across Bombay. Other pieces quietly disappeared into the hands of lucky citizens, melted into bangles or hidden away in drawers.
Dishoom Leeds reimagines the fortune made from the gold bars and guests will discover subtle references to the glamorous mid-century details through the interiors and artwork, giving playful nods to Bombay’s golden age.
With all day dining available, guests can dine on the beloved breakfast right through to late evening feasting, with the café will serve a lovingly curated menu of Bombay comfort food inspired by the city’s cafés, grills, street stalls and family kitchens.
